Poolside CocktailSummer breezes along North Carolina’s Inner Banks call for the perfect cocktail or mocktail. To start your wind down from the summer’s day, enjoy a lovely variety of curated adult beverages. Our list plays perfectly on the flavors of this season and place. Ingredients such as sweet Rocky Hock cantelopes grown along the sandy shores of the Chowan River pair beautifully with fresh juicy peaches, bright berries and herbaceous mint and basil. Best of all, these ingredients are easily sourced directly from our neighbor, the Edenton Farmer’s Market. Make your way in any direction and discover roadside farm stands throughout the county. 

So since now is the perfect time and place, let’s get your Satterfield Special on. This speciality cocktail or mocktail via the recipe below is courtesy of our mixologists from our own farm-to-fork restaurant, The Table.   

Sip it poolside at our sister property, Links at Mulberry Hill, or on in the Courtyard after returning from a day of kayaking. May we suggest partaking on one of the Inn’s many expansive front porches!

The “Satterfield Special,” is named after our most historical and storied house at the Inn and one of the most well known in all of Edenton.

So to keep your summer afternoons cool and soaking in the memories from your time in Edenton, here is the cocktail you will revisit over and over again.  

The Satterfield Special
Yield: 1 serving   

Ingredients
3-4 leaves of fresh mint
1 Fresh strawberry, roughly chopped 
2 oz. Strawberry & Coconut infused vodka* 
1/2 oz. Belvoir Elderflower & Rose Lemonade
Ice
Garnish: mint sprig and sliced strawberry 

Directions: 
In a shaker, muddle the mint and strawberry but be careful to not overwork the mint – just muddle enough to express the mint’s oils. Add vodka, elderflower and rose lemonade and ice. Shake until well-chilled. Strain into glass over ice. Garnish with a mint sprig and strawberry.

For some effervescence, add club soda or sparkling mineral water before garnishing.

*To infuse your own vodka, add ½ c dried unsweetened coconut chips and 10 oz. fresh strawberries, washed and stems removed, to 750 ml vodka of your choice. Let steep in cool place for 4-5 days, giving mixture a good swirl (or shake) once a day. Strain liquid and store in refrigerator for up to 6 months.
