This bittersweet chocolate mousse is a decadent dessert that can be made with minimal preparation with just a few hours needed before service.
BITTERSWEET CHOCOLATE MOUSSE RECIPE
300g bittersweet chocolate finely chopped
4 large egg yolks
300ml thickened cream
1 tablespoon cocoa powder
1/4 metric cup caster sugar
In a double boiler, whisk your yolks and sugar until the mix is warm to touch and sugar has fully dissolved.
Remove from heat and immediately whisk in cocoa and finely chopped chocolate. Continue to whisk until the mixture is smooth with no lumps of chocolate or cocoa.
Transfer to a mixing bowl and allow to cool to room temperature.
In another mixing bowl whip the cream until stiff and peaks form then fold in gently to the cooled chocolate mixture until thoroughly combined.
Place mousse into individual serving glasses or bowls and chill for at least a few hours or overnight.
