This bittersweet chocolate mousse is a decadent dessert that can be made with minimal preparation with just a few hours needed before service.

300g bittersweet chocolate finely chopped
4 large egg yolks
300ml thickened cream
1 tablespoon cocoa powder
1/4 metric cup caster sugar

    In a double boiler, whisk your yolks and sugar until the mix is warm to touch and sugar has fully dissolved.
  • Remove from heat and immediately whisk in cocoa and finely chopped chocolate. Continue to whisk until the mixture is smooth with no lumps of chocolate or cocoa.
  • Transfer to a mixing bowl and allow to cool to room temperature.
  • In another mixing bowl whip the cream until stiff and peaks form then fold in gently to the cooled chocolate mixture until thoroughly combined.
  • Place mousse into individual serving glasses or bowls and chill for at least a few hours or overnight.
